Peach Cobbler French Toast - Delicious Recipe

- 5 peaches
- 10-12 slices of bread
- 4 eggs
- 2 tbsp milk
- 1/2 cup brown sugar
- 1/2 cup butter
- 1 tsp cinnamon
- Powdered sugar, to top
Preheat the oven to 350°
Slice the peaches and put them into a greased 8” x 8” casserole dish.
Whisk together the eggs and milk in a medium to big sized bowl.
Break the bread into small pieces and add it to the egg mixture to soak evenly.
Toss the bread into the casserole dish over the pan of peaches.
Mix the melted butter, cinnamon, and brown sugar. Pour half the mixture over the bread. Set the other half aside.
Bake for 20-25 minutes, until the eggs are cooked through.
Add the rest of the butter sauce to the casserole.
Cook for 5-10 minutes more.
Serve and enjoy with yogurt or ice cream!
- I used fresh peaches mainly because I like to avoid the inner aisles at the supermarket, but you could use a can of peaches if you prefer! This allows you to skip the slicing or make the recipe out of season. You can use two cans of peaches. Be sure to drain out the excess liquids before putting them in the casserole dish.
- When you add the bread to the egg mixture, it might get messy. I would recommend using a bigger bowl than you think you’d need. (Or just embrace the mess and save the space in your dishwasher. That’s the method I opted for!)
- When you add the butter sauce, try to find pieces of bread that need a little bit of love. The fewer dry pieces of bread you cook, the fewer crunchy bites you’ll have. (A little bit of crunch can be nice, but I’ve had straight-up croutons in my french toast casserole and that was not a pleasant experience.)
- Ice cream goes great with this dish! However, yogurt would be a better option for breakfast. Unless you choose to live on the edge!
